地勢盤穹,林木合抱。山曰翠麓,曰重曼,曰斧頭,曰大崎。其峙山極高峻,自彭湖望之甚近。餘登此山,則觀海潮之消長,夜半則望晹穀之日出,紅光燭天,山頂為之俱明。土潤田沃,宜稼穡。氣候漸暖,俗與彭湖差異。水無舟楫,以筏濟之。男子、婦人拳發,以花布為衫。煮海水為鹽,釀蔗漿為酒。知番主酋長之尊,有父子骨肉之義,他國之人倘有所犯,則生割其肉以啖之,取其頭懸木竿。地產沙金、黃豆、麥黍子、硫黃、黃蠟、鹿、豹、麂皮。貿易之貨,用土珠、瑪瑙、金珠、粗碗、處州瓷器之屬。海外諸國,蓋由此始。

島夷誌略 琉球篇

島夷誌略可能是第一個記載台灣生活的文件,這是元朝航海家的航海筆記,記載他去到各個地方的樣貌。關於台灣他提到:煮海水為鹽,釀蔗漿為酒。在成為糖業原料以前,甘蔗在這片土地上是用來釀酒。像是想像當初的居民使用甘蔗的方式,我用現在的釀製方式,呼應歷史上甘蔗在台灣最早的用途。

The idea came from the earliest document that mentioned Taiwan – “Make salt from the fierce sea water and make wines from sugarcane syrup”, which is extracted from Daoyi Zhilüe (A Brief Account of Island Barbarians), 1349 by Chinese voyager, WANG, Da-Yuan.

As a response to the first historical document which noted Taiwan, in this project I decided to use sugarcane juice to ferment some alcohol drink, and beer is my favorite.
